Work has been really crazy lately, and it’s making me feel extra drained when I get home. Add the 105 degree heat to my already dwindled energy (I will complain about Fresno Summers until the day I die) and it’s really hard for me to muster up the energy to cook. For days like this where I don’t want to eat out, I’ll usually gather enough energy to make a one pan meal that takes minimal prep. This is the perfect meal for days like this. Slice up your favorite sausage (mine is a spicy andouille) and cut up a few of your favorite veggies and you’ve got a delicious meal in no time. Next time, I’d like to try this with bell peppers and broccoli too.

  • Preheat oven to 375 degrees. Cut potatoes, onion, and zucchini into small bite sized pieces, and place on a sheet pan. Toss with olive oil, and season with salt and pepper.
  • Slice sausage into bite sized pieces, and add to sheet pan. Place in oven and cook for 20 minutes, or until potatoes are tender. If potato pieces are a little large, it may need to cook for another 5 - 10 minutes. That's it!
