Sheet Pan Sausage and Veggies

Work has been really crazy lately, and it's making me feel extra drained when I get home. Add the 105 degree heat to my already dwindled energy (I will complain about Fresno Summers until the day I die) and it's really hard for me to muster up the energy to cook. For days like this where I don't want to eat out, I'll usually gather enough energy to make a one pan meal that takes minimal prep. This is the perfect meal for days like this. Slice up your favorite sausage (mine is a spicy andouille) and cut up a few of your favorite veggies and you've got a delicious meal in no time. Next time, I'd like to try this with bell peppers and broccoli too.

Ingredients
  • 8 Sausage Links of choice (I used trader joe's smoked andouille sausage)
  • 8 Small red potatoes
  • 1 Medium Yellow Onion
  • 2 Zucchini
  • 1 tsp Olive Oil
  • 1/2 tsp Salt
  • 1 tsp Pepper
Instructions
  1. Preheat oven to 375 degrees. Cut potatoes, onion, and zucchini into small bite sized pieces, and place on a sheet pan. Toss with olive oil, and season with salt and pepper.
  2. Slice sausage into bite sized pieces, and add to sheet pan. Place in oven and cook for 20 minutes, or until potatoes are tender. If potato pieces are a little large, it may need to cook for another 5 - 10 minutes. That's it!
