Looking for a no lettuce salad to beat the heat? This one is easy-caprese! I mean seriously, any time you can have cheese for 1/3 of your meal and call it a SALAD? Sign me up. This caprese salad has fresh mozzarella, juicy tomatoes, sweet basil, and a drizzle of good olive oil and balsamic vinegar. It’s layers of flavor in every bite. Serve with balsamic chicken to make the meal complete!

- Wash tomatoes and cut into thick slices, about 1/2 inch thick.
- Separate the pre-sliced mozzarella into individual slices, or slice the mozzarella log into 1/2 inch thick pieces if it's not pre-cut.
- Was the basil and pick leaves off of stems, leaving intact.
- Arrange salad alternating layers of tomato, mozzarella, and basil. Repeat until you're out of ingredients. Finish with a drizzle of olive oil and balsamic vinegar, and season with garlic salt and pepper.
