Caprese Salad
Looking for a no lettuce salad to beat the heat? This one is easy-caprese! I mean seriously, any time you can have cheese for 1/3 of your meal and call it a SALAD? Sign me up. This caprese salad has fresh mozzarella, juicy tomatoes, sweet basil, and a drizzle of good olive oil and balsamic vinegar. It's layers of flavor in every bite. Serve with balsamic chicken to make the meal complete!

Ingredients

Beefsteak Tomatoes
(Large)

Fresh Mozzarella Cheese
(I use Trader Joe's pre-sliced mozzarella log)

Instructions

Wash tomatoes and cut into thick slices, about 1/2 inch thick.

Separate the pre-sliced mozzarella into individual slices, or slice the mozzarella log into 1/2 inch thick pieces if it's not pre-cut.

Was the basil and pick leaves off of stems, leaving intact.

Arrange salad alternating layers of tomato, mozzarella, and basil. Repeat until you're out of ingredients. Finish with a drizzle of olive oil and balsamic vinegar, and season with garlic salt and pepper.
