I’ve been trying to get back on the healthy meal game but it’s also still way too hot to turn on my oven (thanks, Fresno in August). This is a quick and easy salad that will leave you full and happy (as happy as a salad can make anyone… I mean it’s not a cookie but still). I used poppyseed dressing with this and it was amazing. Not too sweet but complimented the apples and feta really well.

- Rinse lettuce and roughly chop so it's easy to grab a few leaves on a fork. Chop green apple into bite sized pieces, add to bowl with lettuce. Add cranberries, feta, and pecans.
- Cut chicken breast into bite sized pieces and season with salt and pepper to taste. Heat a medium skillet over medium high heat, and coat with non-stick cooking spray. Cook chicken 2 - 3 minutes each side, until chicken is no longer pink in the middle.
- Top salad with chicken and dressing, toss to mix.
