Apple and Feta Salad

I've been trying to get back on the healthy meal game but it's also still way too hot to turn on my oven (thanks, Fresno in August). This is a quick and easy salad that will leave you full and happy (as happy as a salad can make anyone... I mean it's not a cookie but still). I used poppyseed dressing with this and it was amazing. Not too sweet but complimented the apples and feta really well.

Ingredients
  • 4 cup Mixed Lettuce
  • 1 Chicken Breast
  • 1/2 cup Feta Cheese
  • 1/4 cup Dried Cranberries
  • 1/4 cup Pecans
  • 1 Green Apple
  • 2 tbsp Poppyseed Dressing
  • To taste Salt & Pepper
Instructions
  1. Rinse lettuce and roughly chop so it's easy to grab a few leaves on a fork. Chop green apple into bite sized pieces, add to bowl with lettuce. Add cranberries, feta, and pecans.
  2. Cut chicken breast into bite sized pieces and season with salt and pepper to taste. Heat a medium skillet over medium high heat, and coat with non-stick cooking spray. Cook chicken 2 - 3 minutes each side, until chicken is no longer pink in the middle.
  3. Top salad with chicken and dressing, toss to mix.
