Watermelon Feta & Arugula Salad

A light and fresh salad for hot days! The watermelon gives this salad some sweetness and the feta balances it out wonderfully with a sharp bite. Eat it as a side dish, or pair it with balsamic marinated chicken for a meal.

Ingredients
  • 4 cup Arugula
  • 1 cup Fresh Watermelon (Diced in large cubes)
  • 1/2 - 1 cup Feta Cheese
  • 1/4 cup Pecans
  • 1 Cucumber
  • 1/4 cup Balsamic Vinegar
  • 1/4 cup Olive Oil
  • To taste Salt and Pepper
Instructions
  1. Wash your arugula and place in a large bowl. Dice watermelon into large bite sized chunks, add to bowl. Add feta crumbles (if you have a block of feta, dice into bite sized pieces) and pecans. Slice cucumbers and add to bowl.
  2. Whisk balsamic vinegar, olive oil, salt and pepper to taste together in a small bowl. Drizzle as much as you'd like over your salad.
