I’m going to admit something, and I hope you won’t think less of me. Up until about a year ago, I had never had stuffed peppers. That’s right, I went 23 years of my life without knowing how amazing these are for delicious weeknight dinners. You can stuff a pepper with almost anything, but my favorite is a healthy take on fajita / taco stuffed peppers.

- Preheat oven to 375. Cut the tops off of the bell peppers, remove seeds, and discard tops. Remove as much of the white membrane inside the peppers as possible. Place on a large cookie sheet and bake for 7 minutes.
- While peppers are baking, place ground turkey in a large skillet, heated over medium heat. Add taco seasoning and use a wooden spatula to break turkey into small crumbles. Cook 4 minutes until browned.
- Dice 1/2 of an onion and place in the skillet with the turkey. cook another 2 minutes until onions are softened. Add corn kernels, beans, rice, and tomatoes, and stir to combine. Cook another 2 minutes until mixture is heated through.
- Remove peppers from oven and stuff each pepper with mixture until pepper is full. Top each pepper with 2 Tbsp of cheese, and return to oven for another 5 minutes until cheese is completely melted.
