S’mores Cups

Thinking about what to bring or make for your 4th of July BBQ? How about these delicious S'mores cups?! Perfect for kids and adults alike. These have a crumbly and buttery graham cracker crust, with warm and melty milk chocolate and of course, a delicious toasty marshmallow.

Ingredients
  • 2 1/2 cup Graham Cracker Crumbs (2 sleeves of graham crackers)
  • 1 1/2 stick Unsalted Butter
  • 1/8 cup Brown Sugar
  • 1 cup Milk Chocolate Chips
  • 1 cup Mini Marshmallows
  • 6 Large Marshmallows
Instructions
  1. Preheat oven to 325 degrees. Finely crush graham crackers. You can use a food processor to get really fine crumbs, or place all the graham crackers in a plastic bag and crush them by hand (a great way to get some aggression out too!) Place crumbs in a medium bowl.
  2. Melt butter and add to graham cracker crumbs. Add brown sugar. Using a fork, mix the graham cracker crumbs until butter is evenly distributed throughout the mixture, and all the crumbs have a little butter on them. It should look a little mealy and crumbly.
  3. Add 1/4 c of graham cracker mixture to a standard cupcake tin. Using a shot glass, press down firmly in the center of the hole and roll in a circular motion to push the crackers into the side of the tin, making the graham crackers into a cup shape. Repeat until all tins are filled.
  4. Place in the oven for 10 minutes. measure out 1 cup of milk chocolate chips and 1 cup of mini marshmallows.
  5. Remove tin from oven, and add a few mini marshmallows and chocolate chips to each cup until they are filled to the top. Try to arrange the marshmallows and chocolate chips so that each bite has a little chocolate and marshmallow. Return to the oven for another 5 minutes.
  6. Cut the 6 large marshmallows in half. Remove tin from oven and place 1/2 of marshmallow on the top of each S'mores cup. Return to oven for 2 minutes, and then turn on broiler. Be sure to really REALLY watch them at this stage. Broiling happens quickly and it's easy for these guys to burn! After 30 seconds to 1 minute, or just until the tops of the marshmallows are lightly browned, remove tin from oven immediately. Let cool for 10 minutes and enjoy!
