Sinful Cinnamon Rolls

Cinn-fully delicious cinammon rolls! Imagine that a gooey cloud made of butter and sugar and cinnamon lifts you to heaven. At the pearly gates, an angel made of cream cheese frosting gives you a warm embrace. That’s the essence of these cinnamon rolls. If you have some extra time in the morning and have someone (or many someones) that you want to impress, home made cinnamon rolls will knock their socks off! This is a recipe that I’ve adapted from Buzzfeed’s tasty.

  • Heat 2 cups of whole milk until warm to the touch (not boiling or simmering), about 105 - 110 degrees. Add to a large mixing bowl. If milk is too hot, let cool for a few minutes. Add 1 stick melted butter, 1/2 c granulated sugar, and whisk together until sugar is mostly melted.
  • Add packet of active dry yeast to bowl and let bloom (just let it chill in the bowl) for 1 minute.
  • Add 4 cups of flour to the bowl, and mix with a wooden spoon until flour is incorporated. The mixture should be pretty sticky. Cover with a small kitchen towel and let the dough sit for an hour in a warm-ish place like the counter, or on top of the fridge. Go grab another cup of coffee, you’ve got time for 2 episodes of the office.
  • Go take a look at your dough, it should have doubled in size. Add 3/4 c flour, salt and baking powder to dough, and mix until just combined.
  • Once dough isn’t too sticky, move to a floured surface and knead the dough a few times. Wow doesn’t that feel just like the softest fluffy cloud? Use a rolling pin and roll the dough into a rectangle. The dough should be about 1/2 inch thick.
  • Mix 2 sticks of softened butter, brown sugar, and cinnamon in a bowl. Once well combined, use a rubber spatula to spread cinnamon sugar mixture into an even layer over the rectangle.
  • Starting at the longer side of the rectangle, roll dough into a spiral. Keep the seam side down, and cut dough into your rolls. I like my rolls thicc (yes, thick with 2 c’s thick) so I cut mine about 2 inches thick.
  • Place about 5-6 rolls in a greased baking pan (make your rolls extra yummy by greasing the pan with butter). Cover with plastic wrap and leave in a warm place to rise for 30 more minutes. I know, I’m hungry too and i want some damn cinnamon rolls, but DON’T skip this step!! This is so important to make your rolls like soft fluffy clouds.
  • Preheat oven to 350 degrees. *Secret tip: to get rolls extra gooey, with that caramelized sugar on the rolls, pour 1/2 cup of room temperature heavy cream over the rolls before popping in the oven. Bake for 25 - 30 minutes.
  • Once rolls are done baking, remove from oven and spread frosting over top of rolls while they're still warm. Go ahead, really slather it on. Enjoy your little slice of heaven.
