Sheet Pan Steak Fajitas
Steak fajitas. Need I say more? Ok, I'll say a few more words. Fajitas are a staple weekday dinner in our house. Ready in under 30 minutes with minimal dishes and clean up afterwards. When it's a busy night, I use a pre-seasoned carne asada from the grocery store. Trader Joe's has a great one that's super tender and well seasoned. While you're in the quick dinner section of the grocery store, grab some guac and some salsa and your dinner's practically halfway done.

Ingredients

Seasoned Carne Asada
(Trader Joe's carne asada authentica)

Bell Peppers
(Any color)

Yellow Onion

Guacamole
(Home made or store bought)

(Corn or Flour)

Hot Sauce or Salsa
(Tapatio, Cholula, Hot salsa)
Instructions

Preheat oven to 350. Lightly coat a large sheet pan with non-stick cooking spray. Start by thinly slicing the bell peppers and onion. Place on the sheet pan. Thinly slice the carne asada, and place on sheet pan. Place pan in the oven for 20 minutes.

Drain pinto beans and place in a small pot. Heat over low heat, stirring occasionally. When asada has about 5 minutes late, heat the tortillas. Heat a medium skillet over medium heat, and spray with non-stick cooking spray. Heat the tortillas for about 30 seconds on each side, and then set aside.

Remove sheet pan from oven. Assemble your fajitas with a tortilla, steak, veggies, beans, guacamole, sour cream, cheese, and hot sauce of choice.
