Pesto Sauce
Making fresh pesto is so easy and SO worth it! Yes, this pesto will be... the best-o. I'm sorry, please don't go I promise it's a good recipe. The way I make my pesto uses less oil than traditional pesto recipes which makes it slightly healthier without sacrificing any of the flavor. Use it on pasta, pizza, as a dipping sauce or sandwich spread, or whatever you can dream up!

Ingredients

Pine Nuts
((can sub for walnuts))

Instructions

Wash and dry fresh basil, remove any thick / woody stems. Set aside.

Using a small skillet over medium heat, toss pine nuts (or walnuts) in a dry pan to toast. Stir occasionally for 2 - 3 minutes, or until nuts are golden brown and remove from heat.

Add basil, toasted nuts, parmesan cheese, the juice of two lemons, olive oil, garlic, 1/4 cup of water, and salt and pepper to taste. Blend for 1 - 2 minutes until smooth. If sauce is too thick, add a little bit of water to thin. Enjoy!
