Let’s all take a moment to thank Gigi Hadid for inventing pasta! Ok I’m obviously kidding, but she did share her recipe a while back for a vodka pasta sauce that casually went viral. With everyone under the sun taking a stab at the recipe, I wanted to share my version with you all. Honestly, there’s a lot of “viral” pasta dishes out there that in my opinion don’t deserve the hype (I’m looking at you, baked feta pasta) but this one seriously exceeds all expectations. On top of that, it’s SUPER easy and fast to make. It’s going to be a new go-to pasta in our house from now on.

  • Start by filling a medium pot halfway with water and place on medium high heat (for your pasta). Add a generous pinch or two of salt to the water.
  • Add your sausage to a large deep skillet, browning and breaking up into crumbles with a wooden spoon as you go. While the sausage is browning, mince your shallot and garlic, and set aside. Once the sausage is done browning, remove from pan and set aside.
  • In the grease left in the pan, add your minced shallot and garlic. If the pan looks a little dry, you can add a few tablespoons of olive oil. Cook the shallot and garlic until softened. Add in the tomato paste and stir well to combine. Cook until the tomato paste is darker and caramelized, about 2 - 3 minutes.
  • Add vodka to the sauce and stir. Simmer until most of the liquid had evaporated. In a separate bowl, add your heavy cream. Add a few spoonfuls of the salted water to the cream until it's lukewarm to temper (this will prevent the cream from separating in the sauce). Add the cream to the sauce and stir well. Season with salt and pepper to taste. Add your chili flakes to taste, you can add more here if you like it a little spicier. Return your cooked sausage to the sauce and stir to combine. Turn your heat down to low and let the sauce simmer.
  • Check your pasta water. If it's boiling, add pasta and cook until al dente, about 9 - 11 minutes.
  • Once your pasta is finished cooking, remove it from the heat and add your noodles into the simmering sauce. Save some of the pasta water (about 1/2 - 1 cup) and slowly add to the sauce until you reach the desired thickness. I used about 1/2 cup.
  • Add parmesan cheese and stir to combine. Top with a little more parmesan cheese before serving if you want it extra cheesy and enjoy!
