Mango Citrus Barbecue Chicken

Another easy weeknight meal idea coming at cha... grilled barbecue chicken topped with a spicy mango citrus avocado salsa. This is a recipe inspired by Wellness with Courtnie: iIt's a perfect mix of tangy, sweet, spicy, and savory. Serve with rice or over a bed of fresh lettuce to make a yummy salad. It's a fast and fresh dinner sure to please everyone.

Ingredients
  • 4 Chicken Breasts
  • 2 cup Sriracha BBQ Sauce
  • 2 Avocados
  • 2 Mangoes
  • 2 Blood oranges
  • 2 Jalapenos
  • 1 Red onion
  • 1 Lime
  • 2 tsp Salt
  • 2 tsp Pepper
  • 1 Cilantro Bunch
Instructions
  1. Cut each chicken breast into 2 - 3 equal sized strips. Season with salt and pepper to taste. Marinate chicken breasts in 1 Cup of BBQ sauce for 20 - 30 minutes. Set 1 cup of fresh BBQ sauce aside.
  2. Large dice onion, mango, avocado, and oranges and mix together in a medium bowl. Wash cilantro and mince leaves, and add 1/4 cup to bowl, setting the rest aside. Remove seeds and white membrane from jalapeno and mince the green portion of the pepper, and add to medium bowl. Add the juice from the lime and season with salt and pepper to taste, giving one last good mix to the salsa.
  3. Preheat a grill or grill pan to medium high. cook each chicken breast about 3 - 4 minutes each side.
  4. Once cooked through, brush on reserved barbecue sauce to each chicken breast to taste. Serve over rice or lettuce with a large helping of the citrus salsa. Top with fresh cilantro.
