Lemon Tahini Salad
This Greek inspired salad is a little different than your traditional Greek salad, but just as delicious (maybe even more so?). A greek yogurt lemon tahini dressing is the star of this salad, making it creamy, bright, and tangy. Paired with lemon grilled chicken breast, cucumbers, cherry tomatoes, and feta cheese to make for a light yet satisfying meal.

For Chicken Seasoning

Instructions

Season your chicken with salt, pepper, oregano, thyme, and lemon zest. Drizzle 1 tbsp olive oil in a medium skillet on medium high heat. Once oil is hot, add chicken breasts and brown on each side for about 5 - 7 minutes (depending on how thick your chicken is). Once chicken is cooked through and no longer pink, remove from skillet and let rest for a few minutes.

While chicken is cooking, wash romaine, spinach, cucumber, and tomatoes. Chop lettuce and spinach into small strips and add to a large bowl. Chop cucumber and tomatoes into bite sized pieces and add to bowl of lettuce, toss to combine.

Make the dressing by combining lemon juice, Greek yogurt, tahini, garlic, and salt and pepper to taste. Mix well until combined.

Dice chicken into bite sized pieces and add to bowl with veggies. Serve in a big bowl / plate and add a generous spoonful of Greek yogurt dressing and top with feta cheese.
