Famous Fettuccini Alfredo

This is hands down one of my most famous, top requested recipes. This is the first meal I made for my boyfriend Zach and he claims it’s one of the reasons he knew he wanted to spend his life with me. It’s magic Alfredo people! This recipe is creamy and oh so cheesy. Make it a full meal by adding your favorite protein like chicken, shrimp, or crab if you’re feeling fancy. Add in a veggie like broccoli and you can basically call this healthy, right?

  • Add water to a large pot until it's about 1/2 to 3/4 full. Add 1 tbsp of salt to water. Heat over medium high heat until boiling. Once water is boiling, add package of fettuccini pasta to water and stir to prevent from sticking together. Cook for 9 - 11 minutes, stirring every few minutes to make sure the noodles aren't sticking together.
  • In a large sauce pan, add 4 tbsp butter and garlic. When butter is melted and slightly simmering, after about 1 - 2 minutes, add 4 tbsp flour and whisk to combine to make a roux. The butter and flour should combine together to make a paste-like consistency.
  • Slowly add 1/2 cup of chicken broth at a time to the roux. Using a whisk, incorporate all of the liquid into the roux before adding more liquid. It should start out looking like a paste, and after all the chicken broth is added, it should resemble a thick gravy.
  • Add in 1/2 cup of half and half, stir to combine thoroughly. Add salt and pepper to taste. Add a little less salt than you'd think, because the cheese will add more saltiness. Add 1 1/2 cup of cheese and whisk until cheese is melted and well combined into sauce. The sauce should be thick enough to coat the back of a spoon, but thin enough to coat a noodle easily. If it's too thick, add 1/4 cup of pasta water. If it's too thin, let it simmer on low for a few minutes, or add more cheese.
  • When noodles are done cooking, drain (reserving a little pasta water if needed for sauce) and add noodles to the alfredo sauce. Toss to coat each noodle in sauce.
