Coconut Chia Seed Pudding
This is my latest breakfast obsession, coconut chia seed pudding. My friend ordered this in a little coffee shop in Santa Monica and as soon as I had a bite I knew I needed to try and recreate it! Luckily it's super easy to make. Just add all your ingredients together and mix, let chill overnight, and in the morning it's ready for your toppings. I add protein powder to make it a little extra filling, as well as blue spirulina powder. It's supposed to have a lot of great health benefits but honestly I just like that it makes it a pretty sky blue color! Top with your favorite fruits and granola and enjoy.

Chia Seed Pudding

Instructions

Add chia seeds, almond milk, coconut milk, vanilla extract, honey, protein powder, and blue spirulina to a bowl and mix. Cover and refrigerate overnight.

Remove from fridge and add more almond milk if needed to create desired texture. Dice your strawberries and mangos. Top chia seed pudding with granola, fruit, and a drizzle of honey. Enjoy!
