Recently, my tik tok has been flooded with the audio of an old Lifesavers commercial. It’s got a medieval looking man who sings “Berries and cream, berries and cream, I’m a little lad who loves berries and cream!” and you know what, I AM a little lad who loves berries and cream. So I set out to make something with berries this week, and came upon a recipe from Half Baked Harvest that inspired this creation. Is it a dessert? A muffin? Cornbread? The short answer is- yes. I’m not sure how you would classify these but I do know that they are delicious. A sweet coconut cornbread muffin filled with mixed berries and topped with salted lavender honey butter. They are sweet, tangy, floral, with just a hint of savory. In the words of the Lifesaver’s little lad, I say up the octave and GO FOR IT!

- Salted Lavender Honey Butter
Instructions
- Grab a medium sized skillet and place on the stove over medium heat. Add your berries and the honey, and let cook for about 5 - 7 minutes, or until berries begin releasing their juices. Remove from heat and set aside.
- Preheat oven to 350 degrees. Line a 12 cup muffin pan with cupcake liners or spray with cooking spray.
- In a bowl, combine the flour, cornmeal, baking powder, salt, brown sugar, and coconut shreds and mix. Melt the butter and add to the bowl, mixing well with an electric mixer. Add the eggs, coconut milk, and vanilla and beat again until combined, about 1 minute.
- Gently fold in the berries into the batter. Be careful not to overmix, you want bright pink / purple stripes in the batter, and not for the whole batter to turn purple!
- Add the batter to the cupcake tin, filling about 3/4 of the way full. Place in the oven and bake for about 20 - 25 minutes. Remove and cool for about 5 minutes before removing from the pan.
- While the muffins are baking, make the salted lavender honey butter. In a mixing bowl, beat together the softened butter, salt, and honey with an electric mixer. You want to beat air into the butter, so use the mixer for at least 2 - 3 minutes. The butter should look like it's nearly doubled in size. Add the lavender and beat for one more minute.
- Serve the muffins with the lavender honey butter and enjoy!
