Chicken Tzatziki Bowls
My parents have been eating a mostly Mediterranean diet, which inspired me to make some delicious grilled chicken tzatziki bowls! Tzatziki is a delicious creamy dill and cucumber yogurt sauce that adds a delicious tang to anything you put it on. I get mine pre-made from Trader Joe's and it's one of my favorite dips for veggies like carrots and bell peppers. Make it a meal by adding chicken, feta, kalamata olives, and a side of pita bread!

Instructions

Sprinkle seasoning over chicken breasts and set aside to marinate. Cut the cucumber in half lengthwise, and then cut in small 1/2 inch chunks crosswise into bite sized pieces. Slice the red bell peppers and red onion.

Using a large skillet, heat a skillet (with no oil) on medium high until hot (this will give a nice char to the veggies.) Add the onion and bell pepper to sauté until slightly soft, about 3 - 4 minutes.

Either on the grill or a grill pan, grill the chicken breasts, about 4 minutes on each side.

Warm the pita bread in the skillet used to sauté the veggies.

Assemble the bowls. Add cooked chicken, cucumbers, bell peppers, olives, feta, and a generous scoop of tzatziki sauce. Serve with warmed pita bread and enjoy.
