Balsamic Blackberry Brie Bites
Balsamic blackberry brie bites... say that five times fast! These little bite sized appetizers are perfect for a wine and cheese night with friends. Pairs best with a glass (or 3) of a rich berry merlot. Although they look like baby pies, they taste like a cracker covered in cheese and jam. Can you say delicious??

Pre-made pie crust

((one large pack))

Grease a mini cupcake pan and preheat oven to 350 degrees.

Heat a medium sauce pan over medium heat, dump in half of blackberries (reserve 16 for topping the bites later), balsamic, and honey. Mush blackberries with a spatula. Cook over medium for 10 minutes, smooshing blackberries every couple of minutes until you get a jam- like consistency. Then turn off heat and set aside to cool.

Unroll piecrust onto a lightly floured surface. Use a small biscuit cutter, or a small glass (I used a white wine glass, or a mason jar would work too) to cut small circles out of pie crust. Make 16 circles.

Push pie crust down into each hole, pressing the crust against the edges to make a mini-pie crust shape.

Place crusts into oven and cook for 7-10 minutes.

Cut Brie into 16 equal pieces. I don’t like the rind of the Brie, so I cut this off too.

Remove crusts from oven, place one piece of Brie in each pie crust. Place back in the oven and cook for 10 minutes.

Remove pan from oven and let cool slightly before removing bites from pan. Top each bite with a spoonful of the balsamic blackberry reduction, and a fresh blackberry.
