Today’s forecast: cloudy with a chance of turkey spinach and feta meatballs! Use these meatballs any way you like: over your favorite pasta / noodle, over grilled zucchini or eggplant, in a sandwich, or with your favorite sauce. My favorite sauce to use is with a diablo marinara sauce (recipe coming soon) over some delicious grilled zucchini. But I’ll still never say no to some delicious pasta!

- Mince onion and garlic. Add 1 tsp olive oil to a large pan and heat on medium. Add onions and garlic to pan, stirring occasionally and until onions are nearly translucent. Add spinach and cook until wilted. Remove veggies from pan and into large bowl.
- In the same bowl as veggies, add turkey, eggs, bread crumbs, feta, and spices. Use your hands to combine well and roll into balls. Each meatball should have about 1/4 c of turkey mixture per ball.
- Using the same pan that you cooked the veggies in, add another tsp of olive oil and heat over medium low heat. add about 4 - 5 meatballs to pan, making sure they aren't touching and the pan isn't too crowded. Cover pan with a lid and cook for 2 minutes. flip meatballs, cover again, and cook for another 2 minutes. Finally, brown the other sides of the meatballs with the lid off for another 2 - 3 minutes, until meatballs are thoroughly cooked. The outside of the meatballs should be lightly browned. Cut into one to check that they've been cooked through. The inside should not have any shiny looking meat.
- Serve with your favorite sauce, pasta, veggie, or all three!
