You know I’m all about recipes that are fast, easy, and delicious. These Cinnamon sugar protein pancake muffins are sure to please the whole gang! The protein pancake mix is made with whole grain and packs 16 grams of protein per 2 muffins, which is pretty awesome if you ask me! I made these into “muffins” so I can store them for the week ahead in the fridge. When you’re ready for breakfast, pop 2 in the microwave for 30 seconds. If you want a little extra sweetness, hit these with a drizzle of maple syrup for extra yum.

  • Preheat oven to 400 degrees. Lightly grease a muffin / cupcake pan with non-stick cooking spray.
  • Add the apple sauce, milk, egg, sugar, cinnamon, oil, and vanilla extract together in a medium bowl. Add pancake mix and stir until combined. Fill muffin cups to 2/3 full, and place in oven. Bake for 10 - 12 minutes.
  • While the muffins are baking, melt butter, and mix cinnamon and sugar together in a small separate bowl.
  • Remove muffins from oven, brush with melted butter and top with 1/2 tsp of cinnamon sugar mixture each. Keep in an airtight container in the fridge or freezer for up to a week and reheat for 30 seconds if you wan them warm!
